- Rinse dry beans under water and discard any pebbles or shriveled beans.
- Put rinsed beans in a large pot, cover with water (1 lb. beans needs about 8 cups water) and let soak in refrigerator for at least 8 hours or overnight.
- Drain water, fill pot with fresh water, bring to a boil and simmer for about 2 hours until you can easily mash beans between your fingers.
- Keep in fridge for up to 4 days or freeze for up to 3 months.
