Don't break your diet at breakfast! These recipes all taste great, fill you up and come in under 400 calories!
Black Bean Breakfast Burrito
- 1 whole-grain tortilla
- 1 batch-cooked hard-boiled egg, chopped
- ¼ cup batch-cooked black beans (or use canned black beans, rinsed and drained)
- ¼ cup 2 percent shredded Cheddar
- 2 Tbsp. batch-cooked homemade salsa (or use jarred)
- ½ cup cantaloupe cubes
Fill tortilla with egg, beans and cheese. Microwave for 45 to 60 seconds, until warmed. Top with salsa. Serve with cantaloupe.
