Pesto Tofu Scramble
- 3 oz. extra-firm tofu, drained
- 1½ Tbsp. prepared pesto
- 1/8 tsp. turmeric (optional for yellow color)
- 2 slices whole-grain bread, toasted
- 1 cup grapes
Mash tofu, pesto and turmeric with fork until it reaches a scrambled-egg texture. In a skillet, warm mixture for 8 minutes, until hot. Serve with toast and grapes.
