Chicken Tenders, Oven Fries and Carrot Salad
- 2 oz. chicken, cut into ½-inch bites
- 4 Tbsp. whole-wheat flour
- 1 egg, beaten
- ½ cup fry-shaped sliced potato
- 1 tsp. olive oil
- Salt and pepper
- 1 cup shredded carrots
- 1 Tbsp. raisins
- Juice of ½ orange
Preheat oven to 350°F. Dip each chicken piece in flour, then egg, then flour again. Toss potatoes with olive oil. Put chicken and potatoes on baking sheet lined with foil and season everything with salt and pepper. Bake for 30 minutes until an instant-read thermometer inserted in chicken reads 165°F and fries are golden. Serve with carrots and raisins drizzled with orange juice.
