End the day as well as you started it with one of these delicious, healthy dinners.
- 2 oz. whole-grain pasta
- 1 Tbsp. prepared pesto
- 2 oz. tofu, cut into ¼-inch cubes
- 1 cup chopped tomatoes
- 2 cups baby spinach
- 2 Tbsp. grated Parmesan
Make pasta according to directions. In a skillet over medium heat, sauté pesto and tofu for 10 minutes (stirring only twice so tofu is golden). Toss hot pasta and tofu with tomatoes and spinach (spinach will wilt). Top with Parmesan.
