End the day as well as you started it with one of these delicious, healthy dinners.
- 3 skinless chicken drumsticks
- 3 tsp. honey
- 3 dashes cayenne pepper
- 2 Tbsp. crumbled blue cheese
- 3 Tbsp. plain low-fat yogurt
- 1 Tbsp. lemon juice
- 3 cups romaine lettuce
Preheat oven to 350°F. Mix together honey and cayenne pepper and spread on chicken. Bake until meat thermometer inserted in thickest part of a drumstick reads 165°F, about 40 minutes. Combine blue cheese with yogurt and lemon juice. Toss with lettuce.
