End the day as well as you started it with one of these delicious, healthy dinners.
- 2 tsp. grated fresh ginger
- 1 clove garlic, minced
- 2 tsp. olive oil
- 1 Tbsp. light soy sauce
- ½ cup batch-cooked brown rice
- 3-oz. batch-cooked chicken breast, cut in ¼-inch strips (or use skinless rotisserie chicken)
- 1½ cups batch-roasted vegetables, chopped (or use frozen vegetables)
Sauté ginger and garlic in oil and soy sauce for 1 minute. Add rice, chicken and veggies and sauté until ingredients are heated thoroughly, about 7 minutes.
