End the day as well as you started it with one of these delicious, healthy dinners.
- ¼ avocado
- 2 Tbsp. low-fat plain yogurt
- 1 Tbsp. lime juice
- Salt and pepper
- 3 cups shredded romaine lettuce
- ½ cup batch-cooked black beans (or use canned black beans rinsed and drained)
- 10 corn tortilla chips, crushed
- 4 Tbsp. batch-cooked homemade salsa (or use jarred)
Mash avocado with yogurt and lime juice. Season with salt and pepper. Top lettuce with beans, chips and salsa. Drizzle with avocado dressing.
