- 4 oz. salmon
- 1 Tbsp. lemon juice
- 1 clove garlic, minced
- 2 tsp. olive oil
- 3 cups baby spinach
- 1 small potato, sliced and batch-roasted (or microwave a potato)
- 1 Tbsp. chopped fresh chives
- Salt and pepper
Preheat broiler or indoor grill and cook salmon about 10 minutes, until 145°F. Sauté garlic in oil for 1 minute. Add spinach and cook until lightly wilted, 1 to 2 minutes. Warm potato slices in microwave or skillet until warm, 3 to 5 minutes. Sprinkle everything with chives. Season with salt and pepper..
