Honey Mustard Chicken Pita with Cucumber Salad
- 2 tsp. honey
- 1 Tbsp. Dijon mustard
- 3 oz. grilled chicken, sliced (can use skinless rotisserie to save time)
- ½ cup baby spinach
- 1 whole-grain pita
- 1½ cups sliced cucumber
- 1 tsp. olive oil
- 1 Tbsp. apple cider vinegar
Mix honey with mustard and stir in chicken until coated with sauce. Stuff chicken and spinach into pita. Serve with cucumbers tossed with oil and vinegar and seasoned with pepper.
