Sunflower Spinach Salad with Hummus Dressing
- 2 Tbsp. prepared hummus
- 2 Tbsp. lemon juice
- 4 Tbsp. sunflower seeds
- 3 cups baby spinach
- 1 cup grape tomatoes, halved
- 1 slice whole-grain bread, toasted and cut into 1-inch pieces
- Salt and pepper
Mix hummus with lemon juice and toss with sunflower seeds, spinach and tomatoes. Top with toast pieces. Season with salt and pepper.
