Tex-Mex Black Bean and Rice Bowl
- ¾ cup batch-cooked brown rice (or use precooked frozen brown rice)
- ½ cup batch-cooked black beans (or use canned black beans, rinsed and drained)
- 1 cup batch-cooked roasted bell pepper strips (or use frozen, thawed)
- ¼ avocado, chopped
- 4 Tbsp. batch-cooked homemade salsa (or use jarred)
Heat rice, beans and bell peppers in microwave or skillet for 3 to 5 minutes, until heated. Top with avocado and salsa.
