Roasted Vegetable Pasta Primavera
- 2 cups batch-roasted vegetables (or use frozen vegetables, thawed), chopped
- ½ cup batch-cooked whole-grain pasta
- ¼ cup batch-cooked white beans (or use canned white beans, rinsed and drained)
- 1 Tbsp. balsamic vinegar
- 2 tsp. olive oil
- 3 Tbsp. grated Parmesan
- Salt and pepper
Toss vegetables, pasta and beans and warm in microwave or skillet for 3 to 5 minutes, until heated. Top with drizzled vinegar, oil and cheese. Season with salt and pepper.
