Veggie and Cheese Panini with Mixed Green Salad
- 2 slices whole-grain bread
- 1 small zucchini, cut lengthwise into ¼-inch strips
- 4 slices tomato
- 2 slices 2 percent Cheddar
- 2 cups mixed greens
- 1 tsp. olive oil
- 2 tsp. balsamic vinegar
- Salt and pepper
Make sandwich with zucchini, tomato and cheese. Put in toaster oven or under broiler for 7 minutes until bread is toasted and cheese melts. Serve with greens tossed with oil and vinegar and seasoned with salt and pepper.
