8 strips thick-sliced bacon, finely chopped (about 12 oz.)
1 apple (such as Fuji), peeled, cored and finely chopped
1 small red onion, finely chopped
1 rack St. Louis-style spareribs, cut into 4 equal portions
Salt and pepper
1 cup barbecue sauce
1. Preheat oven to 350°F. Line a 9-by-13-inch metal baking dish with foil. In a medium bowl, stir together bacon, apple and onion.
2. Place ribs in a single layer in lined dish. Season with salt and pepper and spread with bacon mixture. Cover tightly with foil. Bake until tender, about 1 hour.
3. Remove ribs from oven. Preheat grill to high, or place a rack in the top third of the oven and turn broiler to high. If broiling ribs, remove ribs to platter, pour off fat and place back in baking dish. Spread barbecue sauce over ribs, using the back of a spoon to spread gently and evenly, taking care not to dislodge any of the bacon mixture.
4. If grilling, place ribs directly on rack, or place baking pan in oven. Cook 10 to 15 minutes, turning once or twice and watching carefully to be sure sauce doesn’t burn, until BBQ sauce is bubbling and caramelized. Remove ribs from oven or grill, let cool enough to handle and serve.
