Cacao is the name of the tree and the beans that are made into chocolate. The percentage of cacao on a chocolate label indicates the amount of ingredients that come from a processed bean. The higher the percentage, the less sugar—and the stronger the flavor. If you see 100 percent, that means it’s unsweetened.
Use it: Since these beans are the base ingredient for all types of chocolate, you won't be tossing them into your next weeknight stew. Cacao does show up on the labels of a number of other products, though—like lotions. These beans are prized for their fat (also known as cocoa butter).
