A frittata is an easy, one-pan meal that's fantastic for breakfast or dinner. Start by preheating the oven and warming a bit of olive oil or butter in an ovenproof skillet. Cook any meats or vegetables in the pan before pouring lightly beaten eggs into the skillet. This is where it gets tough: Let the eggs cook, without stirring them for a minute, then carefully use a spatula to lift the edges of the frattata from the pan and let uncooked eggs run down to the bottom of the skillet.
