Mash 1 cup thawed frozen blueberries with 2 tsp. maple syrup and pour over toasted frozen waffles. Serves 1.
HummusCombine 2 cans drained, rinsed chickpeas with 2/3 cup tahini and 1/2 tsp. cumin in a blender. With blender on, slowly drizzle in 1/4 cup olive oil. If needed, thin hummus with water to reach consistency you desire; add salt to taste. Serve with crackers, pita chips or baby carrots. Serves 4 to 6.
Pasta puttanescaToss 1 lb. cooked spaghetti with 1 jar tomato sauce, 1/2 cup pitted, chopped black olives and 1/4 cup drained, rinsed capers. Serves 4 to 6.
