Mediterranean Chickpea Salad
Top the salad withe more items from your pantry and refrigerator, such as chopped parsely, jarred roasted red peppers, marinated artichokes and pitted olives. Or toss in 1/2 cup chopped, toasted walnuts, pine nuts or pistachios.
