If you don't care for lamb, just substitute beef. Buy stew mean, or cut chuck into cubes. Also, you can easily add more vegetables. Just toss in chopped parsnips, turnips or other root vegetables with the carrots. Or try baby potatoes. The Israeli couscous is great in this dish -- it's larger and thicker that standard couscous. But the regular variety works well, too, or try the whole wheat.
