4 cups Ore-Ida® Southern Style Hash Browns
2 tablespoons Ore-Ida® Chopped Onions
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon Heinz® Dill Pickles, juice
1/2 tablespoon Heinz® Yellow Mustard
1 teaspoon salt
1/8 teaspoon black pepper, ground
1/4 cup celery, sliced
3 tablespoons Heinz® Dill Pickles, chopped
1/4 cup radishes, chopped
2 eggs hard boiled, coarsely chopped
8 medium tomatoes
1/8 cup fresh dill, chopped
1. Place frozen Hash Browns into a shallow microwaveable dish and add 2 Tbsp. of water. Cover and microwave on high heat setting for 8 to 10 minutes, or until Hash Browns are tender, stirring halfway through.
2. In a large bowl, mix together mayonnaise, sour cream, pickle juice, mustard, salt and pepper until smooth. Add celery, pickles, radish, onion and warm Hash Browns, and toss lightly. Gently stir in eggs.
3. To serve, slice off about 1/4 of the top of each tomato and hollow out the inside. Spoon about 1/2 cup of potato salad into each tomato and garnish with dill.
TIP: If desired, use lowfat mayonnaise and lowfat sour cream.
