1 package Ore-Ida® Steam n' Mash® Cut Russet Potatoes
4 red bell peppers
2/3 cup evaporated milk
3 tablespoons butter, divided
1 1/4 cups frozen broccoli, chopped
1 teaspoon salt
1 cup cheddar Jack cheese shredded
1/2 cup french fried onions, divided
1. Preheat oven to 375 degrees F.
2. Cut bell peppers in half lengthwise, cutting through stems and keeping intact. Remove and discard seeds and membranes; rinse and pat dry. Set aside.
3. Microwave Steam n' Mash Cut Russet Potatoes according to package directions. In medium bowl, mash cooked potatoes, milk, and 1 tablespoon butter. Microwave broccoli according to package directions. Add to bowl with potatoes and stir in seasonings and cheese. Spoon potato mixture evenly into bell pepper halves. Cut remaining butter into small pieces and dot the tops of the potato mixture, then sprinkle with fried onions.
4. Bake in preheated oven for 25 to 30 minutes, or until heated through and onions are lightly browned.
