Forget waking up early to prepare your holiday turkey. These methods will cut down your cooking time and have you ready to carve in a jiffy.
Method 1: Spatchcocking
Estimated cooking time: 45-90 minutes
How it works: Spatchcocking, or butterflying, your turkey is one of the easiest ways to cut hours out of your cooking time. By removing the backbone and flattening the body of the turkey onto your pan, you can get a more even roast all the way through. You can also cook it at a higher temperature (in the 450° range) and still expect crisper skin and jucier meat.
