Sugar Shack Ribs

Instructions:

1 rack St. Louis-style spareribs, cut into 4 equal portions

Salt and pepper

Cayenne pepper to taste

1 cup maple syrup

3 Tbsp. ketchup

1 Tbsp. Dijon mustard

2 Tbsp. low-sodium soy sauce

1 tsp. curry powder

Directions:

1. Preheat oven to 350°F. Line a 9-by-13-inch baking dish with foil. Season ribs with salt, pepper and cayenne pepper to taste.

2. Place ribs in pan and cover tightly with foil. Bake 1 to 1 ½ hours, until tender.

3. Combine maple syrup, ketchup, mustard, soy sauce and curry powder in a small saucepan. Bring to a boil over medium-high heat, stirring once or twice. Reduce heat to low and simmer 15 minutes, stirring occasionally, until thickened.

4. Remove ribs from oven, uncover, place ribs on a plate and pour off fat from baking dish. Return ribs to dish, brush with sauce and bake uncovered 35 minutes, basting 2 to 3 times with sauce, until sauce is caramelized.

Serves 4.
