When shopping for peas, choose pods that are compact, firm, crisp and bright green (avoid oversize or yellow pods). Use English
peas within a day or two; refrigerated sugar snap and snow peas last for up to three days.
Tip: If a recipe calls for shelled peas, keep in mind that 1 pound of peas in their pods will yield about 1 cup of shelled peas, or about 6 ounces.
