Start with a baked store-bought or homemade crust. Combine eggs with half-and-half and salt in a large bowl and whisk. For a heartier filling, stir in sauteed vegetables, browned sausage or coked bacon, and shredded cheese. Pour egg mixture into pie crust. Place on a baking sheet and bake in a 375°F oven until filling is set and crust is golden, about 40 minutes. Let stand 10 minutes, slice into wedges, and serve.
Quiche or frittata leftovers—if there are any!—are great in a packed lunch.
