
Irish Soda Bread

4 cups unbleached all-purpose flour
1/2 cup sugar
2 tsp. baking powder
1 tsp. baking soda
2 1/4 cups plain yogurt, preferably whole milk, stirred
1 large egg, beaten
3/4 cup dried currants
2 Tbsp. unsalted butter, melted
1. Preheat oven to 350 degrees. Whisk together flour, sugar, baking powder and baking soda. Add yogurt and egg. Mix in currants.
2. Transfer dough to a 9-inch cast-iron skillet. Cut a cross in top of dough and drizzle melted butter over top. Bake for 50 minutes. Cool for 15 minutes.
