    Turkey Burgers

    3 lb. ground turkey

    Salt and pepper

    1 red bell pepper, seeded and finely chopped 1 tsp. dried thyme

    3 scallions, white part only, chopped

    3 Tbsp. olive oil

    8 hamburger buns

    1. Combine turkey, salt and pepper in a large bowl. Add bell pepper, thyme, scallions and oil and mix well. Form into 8 patties. Chill until ready to use.

    2. Prepare a charcoal fire or set a gas grill to medium-high.

    3. Cook burgers, turning once, until no longer pink in center, about 5 minutes per side. Serve on warm toasted buns.

    1 small onion, chopped

    1 celery stalk, finely chopped

    1/4 cup chopped fresh parsley

    Salt and pepper

    8 hamburger buns

    1. Combine ground chuck, onion, celery and parsley in a large bowl. Season with salt and pepper.

    2. Stir just to blend with a spoon or your hands; do not overwork mixture. Form into 8 patties. Chill until ready to use.

    3. Prepare a charcoal fire or set a gas grill to medium-high.

    4. Cook burgers, turning once, 8 minutes for medium-rare. Serve on warm toasted buns.

    Salmon Burgers

    3 (14.75 oz.) cans pink salmon, drained

    Egg whites from 4 large eggs

    1/4 cup mayonnaise

    1/3 cup lemon juice

    1 1/2 cups plain bread crumbs

    3 Tbsp. chopped fresh dill

    Salt and pepper

    8 hamburger buns

    1. Put salmon in a bowl; remove skin and bones.

    2. In a bowl, whisk egg whites and mayonnaise.

    3. Stir all ingredients together (except buns). Form into 8 patties, cover and chill for 1 hour.

    4. Prepare a charcoal fire or set a gas grill to medium-high. Thoroughly oil grill grate; mist burgers with cooking spray.

    5. Grill burgers until firm, 3 minutes per side.
