Nonchalantly change the subject. Politely say something like, "I know this is totally off the topic, but have you read the book Eat, Pray, Love?"
Show your true colors. Laugh and say breezily, "Oh no, I can see we disagree here." Then say something that reassures the person that you're not upset with them, like, "Of course, friends don't have to agree on everything!"
Sneakily disagree. Rather than focusing on the fact that you don't agree with the person, try to find common ground. Think of someone who agrees with his or her opinion; say, for example, "My dad feels the same way you do."
Bite your tongue. If there's no good response to the person's opinions, just listen and acknowledge what she's saying--even if you don't agree--until you can slip out of the conversation.
